Joseph has spent half of his life serving the Coles. He began serving them even before Jacob's father was appointed as helmsman. He had risen from the ranks of a mere guard to that of a butler, then to that of chief butler, so it's no surprise that he knows every detail about the Coles.

Also, he had not spent most of his leisure whiling away time. Instead, he used it to learn about the daily activities and society and the educational status of the majority of the Coles.

That is how he discovered that 99% of them are undergraduates! In normal circumstances, they are completely useless! What better time to bring it up than right now? He can't believe Jacob would rather flee than punish his son! When did the vile principled man become this volatile? Hah! It's kind of irritating!
