"Wear this," said Iwatani as he still attached the apron to me.

I almost couldn't breathe while he put on the apron for me. I just swallowed hard while staring into space. And when he finished attaching the apron to me, that was the only time I took a breath.

Fortunately, he was already busy looking at the ingredients and equipment we would be using, so he didn't notice my reaction. I took deep breaths repeatedly to calm my racing heart.

"I'm going to teach you how to cook Adobo. This is one of the easiest dishes to cook, so I think you'll get it right away. The pork is still a bit tough, so let's boil it first."

I stood beside him and watched what he was doing. He instructed me to chop onions and a few other ingredients to add to the Adobo.

This was our go-to dish in Canada because it was dad's favorite. I've never got to cook it for him, though, because we had a cook. But now that I'll be learning this, I'll make sure to cook it for dad the next time we see each other.
